Thanksgiving Recipes Prosecco Cocktail

Thanksgiving Recipes Warm Salad of Roasted Squash, Prosciutto and Pecorino
Butternut squash and Italian ham give a great twist to a classic salad.

Ingredients

1 butternut squash
olive oil
sea salt
freshly ground black pepper
1 small dried red chilli
1 heaped teaspoon coriander seeds
20 slices quality prosciutto or Parma ham
4 handfuls rocket
6 tablespoons extra virgin olive oil
4 tablespoons balsamic vinegar
1 small block pecorino or Parmesan cheese

Thanksgiving Recipes Hasselback potatoes with gorgonzola & honey

50 g pine nuts
1 large head of cauliflower

Thanksgiving Recipes Sweet Glazed Carrots
These beautifully glazed carrots make the perfect side to any roast dinner.

Ingredients

2 large bunches of carrots, (roughly 1kg)
40 g unsalted butter
1 tablespoon goose fat , (optional)
6 cloves of garlic
40 g golden caster sugar
1 heaped tablespoon soft brown sugar
2 clementines , juice of
½ a bunch of fresh thyme
sea salt
freshly ground black pepper

Thanksgiving Recipes Roasted Heritage Turkey
A layer of butter under the skin results in a crisp exterior and moist breast meat. Allow two hours to bring the turkey to room temperature before roasting.

Ingredients

1 whole fresh or thawed frozen heritage turkey
4 tablespoons unsalted butter, softened
Coarse salt and freshly ground pepper
12 thyme sprigs
6 sage sprigs
3 dried bay leaves
2 tart apples, sliced 1/2 inch thick (cores reserved)
1 onion, quartered
2 celery stalks, cut into 1-inch pieces
2 cups water, plus more if needed

Thanksgiving Recipes Madeira-Sage Turkey Gravy
The perfect accompaniment to savory roast turkey, this gravy is enriched by the subtle sweetness of Madeira and caramelized onions along with a hint of fresh sage.

Pan drippings from roasted turkey
1 cup Madeira
6 Tbs. vegetable oil
1 lb. shallots, peeled and halved
6 Tbs. all-purpose flour
4 cups turkey or chicken stock

2 bramley apples, peeled cored and cut into chunks

150 g golden caster sugar
500 g fresh cranberries or frozen ones thawed

Thanksgiving Recipes Chocolate pumpkin brûlée pie
The chocolate in this triple-layer pie serves as a delicious barrier between the filling and crust, keeping the pastry crisp.

Ingredients

50 g cocoa powder
175 g plain flour
2 tbsp icing sugar
115 g butter , chilled and diced
1 egg yolk
100 g dark chocolate (no more than 62% cocoa solids) , melted
50 g granulated sugarFor the pumpkin filling:
425 g tin of puréed pumpkin, (or 1 butternut squash, roasted then puréed to give you 425g)
2 tbsp plain flour
1 orange, grated zest of
1 pinch of ground cloves
1/2 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp grated nutmeg
100 g soft dark brown sugar
300 ml crème fraîche, beaten
2 large free-range eggs
2 large free-range egg yolks, beaten
